So many diet desserts taste flat or like cardboard. This low fat sugar free recipe tastes like the real deal. I think if you did the blind fold test between these low calorie muffins (142 Calories) and the high fat, high calories (usually 500-600 Calories) muffins you buy at your local bakery, you won’t be able to tell the difference. This is a flexible recipe and you can substitute all kinds of fruit.
INGREDIENTS:
- 1 Cup Quick-cook oatmeal
- 1/2 tsp Allspice
- 1 Cup Fat-free skim milk
- 1 Cup Splenda
- 1/2 Cup White flour
- 4 Egg whites
- 1/2 Cup Whole wheat flour
- 1 Cup Mashed bananas
- 1/2 Cup Ground flax OR whole wheat flour
- 2 tsp Vanilla extract
- 1 tsp Baking soda
- 1/2 Cup Fat-free sour cream
- 1 tsp Baking powder
- 1/2 Cup Unsweetened applesauce
- 1/2 tsp Ground cinnamon
- 1 Cup Blueberries (drained)
- 1/2 tsp Ground cloves
- 1 Lge Apple
DIRECTIONS:
- Preheat oven to 350F and line muffin tins (12 muffins)
- Soak oatmeal in skim milk for 20 minutes
- After the 20 minutes, add splenda, egg whites, bananas, applesauce, vanilla and sour cream. Mix well.
- In a different bowl, mix all the dry ingredients well. (flours, flax seed, baking soda, baking powder, spices)
- Slowly mix dry ingredients into wet ingredients. Mix well.
- Fold in berries or apple (You can subistitute any other friut)
- Fill the 12 muffins cups equally. It doesn’t expand so will not overflow out of the cup. Bake until a toothpick can be stuck in the middle of a muffin and it comes out clean. (About 15-20 min)
Although I’m the only one losing weight in this household, everyone likes these muffins. I’m sure they will be a hit in your home too. Finally a great diet muffin!!!!!!!!!!!!!
Hi interesting recipe and I am sure it’s great to eat as well. I however think that for the really overweight person struggling to lose weight, a muffin is a muffin is a muffin
It’s all about calories in and calories out when it comes to losing weight. I think 142 calorie muffin as a treat is much better than 350 calorie piece of pie/cake. It’s all about making positive changes in eating habits combined with increasing physical activity.
There is a big difference between eating this muffin and the normal store bought ones. Many people would find it easier to replace their normal muffin with a low calorie one than to cut it out altogether, so this is a good idea.

Weight loss is a constant struggle, and if this helps people then all well and good, my personal opinion is just have what you like but less of it, it’s that simple

woops I forgot to set the timer when cooking these muffins. They turned rock hard and a bit burnt. Still very tasty none the less.

I dont know if anyone has actually doubled checked the ingredients but it is not low fat. There are better alternative muffin recipes.

A little fat in the muffin is not going to hurt, if the over all end result is a ridiculously low, 142 cals! Haha…
Anyways I am actually going to add a cup and a half of whey protein to this recipe. It’s going to add calories, but 232 cals is not really that much (9 standard scoops of whey for approx 1 1/2 cups. Each scoop is 120 cals, so 9 x 120 divided by the 12 muffin servings is an extra 90 calories.)
We don’t get enough protein during the day so I think this is a good suggestion. For people who are self-conscious of the higher calories, it should not be a problem. The body reacts to higher protein intake and should make you feel more satisfied and full.
Well, we will have to see how the recipe responds to whey powder. If the powder makes it too dry I might have to add a bit of water which isn’t a huge deal.
